Holiday Spice Cookies (A Pink Saturday Special)




When I saw this week's theme was calling for holiday recipes I thought "Okay... that's easy."

Then I thought for a minute. Hmmmm. What recipes do I use? Then I Thought for another minute. Then it hit me. I don't have any!



While it took me another minute to get over my shame (Okay, I shrugged it off instantly) during this brief moment of doubting my domestic bliss, an email came into my inbox.



One of our M.O.P.S. (mothers of preschoolers) moms made some yummy spice cookies for our meeting this week and wanted to share them with us. Wasn't that sweet of her? And lucky for me!

Here is her recipe:

Spice Cookies

1 Betty Crocker Spice cake mix
2 eggs
1/2 c. butter, melted
1/4 c. brown sugar
1 or 2 tsp. vanilla
Place cake mix and other ingredients in large bowl and mix until well blended. Drop by Tablespoon onto greased baking sheets. Bake at 350 for about 12 minutes. Allow to cool on sheet about 2 min., then place on racks to cool. These freeze very well. Enjoy!

I love spice cookies...My Mom long ago, used to surprise me with them after school. The house always smelled so good when she baked them!
